Baked Cowboy Dip

Our baked cowboy dip dials up the flavor with taco-seasoned ground beef, sweet corn, and black beans, all tossed in BBQ sauce and topped with pickled jalapeños and crispy fried onions.

Baked Cowboy Dip

Instructions

  1. Arrange a rack in center of oven; preheat to 375°. In a large bowl, mix cream cheese, sour cream, BBQ sauce, and pickling liquid. Stir in beans, corn, gouda, and white scallion parts.

  2. In a 12" cast-iron or ovenproof skillet over medium-high heat, heat oil. Add beef and bell peppers and cook, breaking up meat with a spoon, until beef is cooked through and peppers are softened, 5 to 6 minutes. Drain excess fat, then stir in taco seasoning. Remove from heat.

  3. Add cream cheese mixture to beef mixture and stir to combine. Sprinkle with cheddar.

  4. Bake dip until golden and bubbly, 15 to 20 minutes.

  5. Top with chopped jalapeños, fried onions, and green scallion parts. Serve with chips alongside.
