Healthy Lunch Bowl with Sweet Potato and Ground Beef

Healthy Lunch Bowl with Sweet Potato and Ground Beef

Instructions

  1. Finely dice 1 medium sweet potato. Drizzle with 1 tsp olive oil, season with salt, pepper, 2 tsp onion powder, 1 tsp chipotle powder, and 1/2 tsp sweet paprika. Add to a tray, pop in the oven for 20-25 mins at 400F.

  2. Cook 1 lb lean ground beef in 1 tsp olive oil. Season with salt, pepper, 1 tbsp chipotle powder, 1 tbsp onion or garlic powder, 1 tbsp oregano, & 1 tbsp sweet paprika. Mince to small pieces and brown until almost crispy, about 15-17 mins.

  3. Divide roasted sweet potato into 4 bowls. Add shredded lettuce, 1/3 cup cottage cheese, 4oz cooked beef, half avocado, diced red onion, cilantro, and sauce.

  4. For the sauce: mix 2 tbsp mayonnaise with 1/4 cup sriracha, 2 tbsp rice vinegar, 1/2 tsp soy sauce, 2 tsp monk fruit sweetener, juice of 1 lime, 1 grated garlic clove, and 1 sliced scallion or cilantro. Season with salt and pepper.

  5. Top with extra veggies, chili flakes, sesame seeds and enjoy.
