Sichuan Style Stir-Fried Chinese Long Beans

Instructions

  1. Wash the long beans and trim the ends. Cut them into 2-3 inch segments and ensure they are completely dry.

  2. Heat peanut oil in a wok or a large sturdy sauté pan over high heat until shimmering.

  3. Add the dried chillies and Sichuan pepper to the oil. Stir for about 30 seconds until the spices are fragrant and the chilies slightly darken, being careful not to burn them.

  4. Add the beans to the pan. Stir-fry for 5-7 minutes on high heat, pressing them down occasionally, until the skins are wrinkled and slightly blistered.

  5. Add the salt, sugar, and soy sauce. Toss well to coat the beans evenly.

  6. Drizzle with sesame seed oil, give it one final toss, and serve immediately.
