Red Peas Soup
A traditional hearty Jamaican soup made with kidney beans, beef, and coconut milk, featuring hand-rolled 'spinner' dumplings.

Instructions
Wash and rinse the dried kidney beans. Cover with plenty of water in a deep bowl and soak overnight or for at least 2 hours. Discard soaking water before cooking.
Prepare the salted meat (if using pigtails): Cut into 2-inch pieces. Place in a pot of water, bring to a boil, and cook for 20 minutes. Drain, rinse, and repeat the boiling process to tenderize and remove excess salt.
Place all ingredients (except the flour, potatoes, and coconut milk) into a large pot. Cover with water and bring to a boil over high heat. Skim off any froth from the surface.
Reduce heat to a gentle boil and cook for 1 hour and 15 minutes, or until the beans are tender and starting to fall apart.
Add the potatoes and coconut milk to the pot and continue cooking for 15 minutes.
While the soup continues to cook, prepare the spinner dumplings by mixing flour and water until a smooth dough forms. Let it rest for 5 minutes.
Pinch off tablespoon-sized pieces of dough and roll between your palms to form cigarette shapes. Add them to the pot.
Stir well and continue cooking for another 15 minutes on a rolling boil. Taste and adjust salt if necessary (the salted meat usually provides enough seasoning).
