Jamaican Beef Patties
Traditional flaky Jamaican pastries filled with a spicy and savory minced beef filling.

Instructions
Make the Pastry Dough: To a large bowl, add flour, 1 teaspoon salt, and curry powder (or turmeric) and mix thoroughly. Rub butter/shortening into flour until there are small pieces covered with flour. Gradually add ice water until the mixture forms a dough. Wrap in plastic and refrigerate for 30 minutes.
Make the Filling: Season ground beef with allspice and black pepper. Heat oil in a skillet, sauté onions until translucent, then add red pepper, garlic, and thyme. Add the beef and cook until no longer pink.
Simmer the Filling: Add ketchup and 2 cups of water. Bring to a boil, then simmer until most liquid has evaporated and a thick sauce remains. Fold in green onions (1/2 cup onions) and let cool completely.
Assemble: Beat the egg and 1 tbs water for an egg wash. Roll out dough on a floured surface into 5-inch circles. Place 3 tablespoons of filling on one half, moisten edges with water, fold over, and seal with a fork.
Bake: Place patties on a parchment-lined sheet and refrigerate while preheating oven to 350°F. Brush with egg wash and bake for 30 minutes or until golden brown.
