Instructions
Cut the yellow onion into chunks and add it to a pan with some oil. Add a tiny pinch of salt to the onions.
Cut the tomatoes and salt and pepper them.
Add a splash of water to the onions periodically to deglaze the pan while they caramelize.
Quickly prepare your lettuce.
Use 80/20 ground beef. Form patties, with each patty being 3.5 ounces. Flatten them out and add salt and pepper to one side.
Butter the buns and toast them on a hot griddle (using sesame seeds like Five Guys).
Throw the patties on the griddle (seasoned side down), salt and pepper the uncooked side.
Flip the patties when juices rise to the surface, ensuring a beautiful char and caramelization before adding the cheese.
Assemble the burger: Start with ketchup and mustard on the bottom bun, then add the caramelized onions, the patties (with cheese), tomatoes, and lettuce and pickles.
Add the mayo to the top bun.
Wrap the assembled burger in foil to steam it like Five Guys.
