Brown Butter Pan Sauce for Fish

Instructions

  1. Season the fish with salt and lightly dust with flour.

  2. In a pan, melt a generous amount of butter over medium heat until it browns and smells nutty (be careful not to burn it).

  3. Use a pallet knife or spoon to lift the thinner part of the fish during cooking to ensure even cooking.

  4. If the butter starts to burn, remove some of it from the pan and add fresh, cold butter.

  5. Once the fish is cooked, remove it from the pan.

  6. Lower the heat and add the minced shallot to the remaining brown butter in the pan. Sauté briefly.

  7. Add the capers and lemon segments to the pan, stirring to create the sauce base.

  8. Stir in chopped fresh dill and parsley.

  9. Spoon the brown butter sauce over the cooked fish.
