Apple Cream Tart (Elmalı Kremalı Tart)

Method

  1. Prepare the Apple Filling: Dice 4 medium apples. Cook them with 4 tablespoons of sugar until they release their juices and soften. Once cooked, stir in 1 teaspoon of cinnamon. Set aside.

  2. Prepare the Cream Base: In a saucepan, combine all cream ingredients EXCEPT the liquid cream, vanilla, and the cooked apple mixture. Whisk well with a whisk until combined. Place on the stove and cook, stirring continuously, until the mixture thickens significantly (it will be quite firm). Do not panic.

  3. Finish the Cream: Remove the thickened cream from the heat. Stir in the liquid cream and vanilla. Finally, fold in the prepared apple mixture. Set aside.

  4. Prepare the Dough: Combine all dough ingredients EXCEPT the flour. Gradually add the flour while mixing until a very soft dough forms.

  5. Divide and Freeze Dough: Take about one-quarter (1/4) of the dough, shape it into a log, wrap it in plastic wrap, and place it in the deep freezer.

  6. Line the Pan: Divide the remaining dough into two equal parts. Use one part to press evenly into the bottom of the prepared 25x25 cm (or 19x19 cm) baking dish. Divide the second part in half again. Use these smaller portions to press upwards along the sides of the pan to form the tart edges.

  7. Assemble the Tart: Pour the prepared cream filling evenly over the base layer of the dough.

  8. Top and Bake: Remove the frozen dough portion from the freezer and grate it over the cream filling. If desired, sprinkle chopped almonds or hazelnuts on top.

  9. Bake in a preheated fan oven at 180°C (350°F) for 25-30 minutes, or until golden brown.

  10. Serve: Let the tart cool completely. Dust generously with powdered sugar before serving.
