Place the peas in a bowl of cold water + rinse well. Strain + set aside.
To a large saucepan, add a good glug of olive oil to a medium high heat. Add the onion + sauté with a pinch of salt until softened (3-5 mins). Add the garlic + fry until fragrant (1 min).
Add the peas to the pan, then cover with water. Add the bay leaves, a healthy pinch of salt + pepper, then stir to combine. Bring to a simmer, then reduce the heat. Continue to cook for 25-30 mins, or until the peas have completely softened. You may need to skim any foam whilst cooking too + add more water if required.
Once the peas are cooked, remove the bay leaf + transfer into a food processor. Blend until smooth, then add a good squeeze of lemon juice + a drizzle of olive oil. If the mixture is too hot, add an ice cube to cool down. Season to taste with salt + pepper.
It will taste AMAZING if left in the fridge for a couple hours (flavours develop so much). To serve, spoon into a bowl. Top with parsley, more onion, capers + extra virgin olive oil. Serve with pitta or dipper of choice + enjoy!
